overnight oatmeal

Good morning! Yesterday, I shared my son’s favorite breakfast, chia pudding with goji and blueberries, and today, it’s my daughters turn! This is her breakfast of choice – simple overnight oats. My son and I are mostly grain free, so we stick to our chia pudding, but my daughter and my husband LOVE these oats!

This is usually the last meal I prepare each night (along with the chia pudding) before taking a deep breath of gratitude and then flopping down to bed. Having this prepared for the early (and I mean early) morning rush makes breakfast time SUPER easy!

simple overnight oats

Ingredients

  • 1 cup organic rolled oats (not instant)
  • 1 1/2 Cups almond milk (or milk of choice)
  • 1 tablespoon chia seeds
  • 1 tablespoon flax seeds
  • 1 tablespoon local honey
  • 1/2 Teaspon vanilla

Directions

Step 1. Combine the oats, milk, vanilla, chia and flax seeds in a lidded bowl or jar
Step 2. Allow the mixture to sit in the refrigerator overnight
Step 3. In the morning, stir in the honey and desired mix-ins - such as berries, nuts, coconut, bananas
Step 4. Enjoy!
