muffinThese gluten free almond muffins are a big hit with the kids, as well as the husband!  As Fall approaches, I find myself baking more, and loving the amazing aroma and cozy feeling it creates in the house. Since we are mostly gluten and grain free,  it makes it difficult to buy nutritious yummy options from the store. These muffins go in the lunch boxes on a daily basis!

When friends come over, they are always asking for a muffin to try, so I vary the recipe sometimes to keep them curious. It’s nice to know that there are healthy options that the kids still look forward to eating!

gluten free almond chocolate chunk muffins

Serves 4
These gluten free, moist almond muffins are a staple in our house.


  • 1 cup Almond Flour
  • 1 teaspoon Cinnamon
  • 2 Large Organic Eggs
  • 2 tablespoons Local Honey
  • 1/4 teaspoon Baking Soda
  • 1/2 teaspoon Apple Cider Vinegar
  • 2 tablespoons Dark Chocolate Chunks


This recipe makes 4 muffins, double or triple to make a weeks worth..YUM!


Step 1. In medium bowl combine almond flour and baking soda and cinnamon
Step 2. In larger bowl combine eggs, apple cider vinegar and honey
Step 3. Stir dry ingredients into wet, mixing until combined
Step 4. Scoop about ¼ cup of batter into each greased muffin tin or paper lined muffin tin
Step 5. Bake at 350° for 15 minutes, until slightly browned around the edges
Step 6. Cool in the pan for ½ hour
